Effective drying relies on precise control of energy and moisture transfer. High‑quality French fries require accurate management of drying conditions to remove both surface water and internal moisture. After surface moisture evaporates, internal moisture moves outward through capillary action and is removed through controlled evaporation. Drying performance depends on factors such as target dry solids, raw potato gravity, and cut size.

A best‑in‑class French fry dryer must deliver precise temperature and humidity control to protect product quality. Over‑drying or drying too rapidly can seal the fry surface, restrict moisture removal, pull excess sugars to the exterior, and create defects such as hollow centers, tough shells, or overly high dry solids. For battered fries, careful control is essential to maximize batter adhesion.

Hygienic Design

  • Hygienic, fully welded stainless steel enclosure removes all potential harborage points

  • Externally mounted motors for blowers and belt drives removes conduit, junction boxes, wiring from the enclosure to enable best in class sanitation

  • Coils are vertically mounted with access on both sides for ease of sanitation 

  • Embedded support structure within the fully welded walls allows for motors and gear boxes to be mounted on the outside of the enclosure – easier, safer maintenance access, extended service life, and improved sanitation
